Classic Nouveau fermentation with 5 days of Carbonic Maceration (whole grapes are fermented in a carbon dioxide rich environment prior to crushing), followed by 7 to 10 days of maceration, pigeage (punch down of the cap) and delestage (racking). Food Pairing: Beaujolais-Nouveau has been very popular with almost every Thanksgiving dish. From Turkey to Ham, from Green beans to mashed potatoes, from gravy to cranberry sauce.
